Gone unchecked, these patients will gain weight and will eventually develop Type 2 Diabetes. To regain your insulin sensitivity, you need to put 'good' carbohydrates back into your diet and reduce the intake of saturated dietary fat. This is accomplished by first eliminating the processed carbs, and eating whole-grain bread, fresh fruits, and vegetables that have undergone minimal processing. According to Bessesen (2001), "Ingestion of foods high in dietary fiber content appears to be associated with modest beneficial effects on insulin sensitivity.

Three studies have shown fiber consumption to be associated with a reduced risk of type 2 diabetes" (p.2785S). The key components of the diet are high fiber, the elimination of saturated fat, more whole grains, and fresh fruits and vegetables. These recommended foods are exactly what most fast foods lack. Processed white bread, saturated fat from fatty meat, and few fresh fruits and vegetables is the diet that causes insulin resistance, and are the foods to avoid whenever possible. Rectifying the diet and eliminating the bad foods can turn the situation around as the body will redevelop a sensitivity to insulin, and help to stave off heart disease and cholesterol problems.

The overabundance of fast food in the nation's diet is the major contributor to obesity, type 2 diabetes, and insulin resistance. Changes in the diet to include fiber, whole grains, and fresher foods can help to lose weight and reduce the risk of numerous chronic health problems associated with insulin resistance.
